Chicken with Fresh Apricots, Ginger, and Cracked Almonds




Using the rest of my produce overhaul from the farmer's market last week, I cooked this chicken with fresh apricots, ginger, and cracked almonds dish (recipe here).  A few changes I made were substituting the maple syrup for pomegranate one, lemon zest for sour grapes, and omitting the butter.   I could not resist taking home the sour grapes (harvested before they reach their full growth) to try after chatting up with 2 ladies at the farmer's market.  The freshly toasted and grated almonds smell and taste a world different from the dried processed ones.  The wonderful aroma of fresh ripened apricots during the cooking process is very inviting.   I'll try this again with lemon zest next time.  I think it's so easy to eat healthier during the summer thanks to the abundance of various yummy fruits and vegetables.  :)
