Taking full advantage of the seasonal abundance of cherries, I've been experimenting with them in various dishes. My favorite is the cherry vinaigrette salad dressing. I didn't follow any specific recipe; I pretty much just went by a-spoonful-of-this-and-a-spoonful-of-that method.
Here's what I did:
1) Add 1 teaspoonful of olive oil to a pan, followed by some freshly ground garlic
2) Add pitted cherries when the garlic starts to turn slightly brown
3) Then add balsamic vinaigrette & water (~ 2 tablespoons each)
4) Let it simmer on low heat ~ 10 min (Add a teaspoon of sugar if you like).
5) Salted to taste.
I will make this again today for our Father's day dinner. I hope my dad will like it (He's really picky about foods). :)

I never heard of cherry salad before but I must have been delicious!! As soon as our cherries here are ripe and sweet I'll try it!
